Leftover Turkey Nachos Recipe

Here my super simple nacho recipe that features some tasty vegetables and just a small amount of Turkey. Perfect for football during the holiday weekend.

Soft Tortillas
Olive Oil
Refried Beans
Cumin
Red and Green Pepper
Jalapeño
Tomatoes
Cilantro
Colby Jack Cheese
Sour Cream 

Pre-Heat oven to 375 for chips. Cut the tortillas into 4’s. Lightly brush olive oil onto both sides of the chips. Lay foil down on a baking sheet. Spread tortillas evenly on sheet, make sure they are not covering each other. Bake for about 8 minutes. Keep your eyes on them. Don’t let them get any more than a nice brown. They will bake again at the end.

Dice all veggies. I like to have chunks instead of small diced pieces. 

Warm refried beans up. Add a generous amount of Cumin or spices of your choice. When warm, bean each tortilla. I like to add a healthy portion of beans on each chip. I love refried beans! 

Place diced turkey breast on top of beans, then add 2 cups of grated cheese. 

Add veggie chunks. Leave the tomatoes until after the 2nd bake

Place in oven for 8 minutes at 375 or until cheese is melted. 

Add fresh tomatoes to serve.
